What is Noodle alla Gola?

Noodle alla Gola is an independent project about food storytelling. The team creates videos, written stories, and community tools for people who are genuinely passionate about food - not just what's on the plate, but everything that surrounds it: culture, people, places, history, and obsession.

The mission is to build a community of food enthusiasts: a space to discover, share, and connect, with no agenda other than genuine curiosity.

How it started

Noodle alla Gola was founded in 2023 by Ester and Davide, two Italian designers who wanted to immerse themselves in the world of gastronomy and build something different in the food media space, a project rooted in authentic storytelling rather than profit. For them, food was never just about eating: it’s a way to explore new flavors, connect with diverse people, and gain insight into different cultures.
About a year in, Francesca joined as copywriter to expand the editorial side and bring a new layer to what was already a creative-first operation.

What they make

Noodle alla Gola publishes across multiple formats, always following curiosity first, without forcing content into a mold for the sake of consistency. The team sees formats as a starting point, not a constraint: new ideas, new formats, and creative experiments are always part of the picture.

Why independent?

NAG’s core values are connection, independence, and transparency, not as abstract principles, but as the way the project concretely operates. Everything published, everyone they work with, and every story told is decided by the team alone, with a long-term vision and no external pressures. There’s no food advertising, no paid reviews, no sponsored editorial. This is a deliberate choice, it’s what allows the project to be genuinely honest about what it recommends and why, and to contribute to the food world in a meaningful way.

When partnerships happen, they look outside the food industry for collaborations that feel natural and don’t compromise the editorial voice.
